Ingredients

  • 300 mlDry white wine, chilledA crisp one — Grüner or Picpoul
  • 300 mlFiltered water, chilled
  • to fillIce cubes
  • 3Cucumber ribbons
  • 3Lemon twists

Method

  1. Combine

    Pour the chilled wine and water into the NOVO bottle. Keep everything cold.

  2. Carbonate gently

    A single, gentle press is all wine needs — bottom-up injection carbonates it evenly without stripping its character.

  3. Pour over ice

    Pour into a large wine glass filled with ice.

  4. Garnish

    Finish with a cucumber ribbon and a twist of lemon.

Bottom-up advantage

It's the dissolved sugars and alcohol that make top-down carbonators erupt on wine. NOVO builds pressure from below, so the bottle never blows out.

Tip

Don't over-carbonate wine — one press preserves the aromatics. A top-down machine simply can't do this without foaming the bottle over.
