Ingredients

  • 90 mlEspresso, freshly pulled & cooled
  • 600 mlFiltered water, well chilledThis is what you carbonate
  • 60 mlTonic syrupOr carbonate tonic water directly — see tip
  • to fillIce cubes
  • 1Orange peel

Method

  1. Carbonate

Fill the NOVO bottle to the line with chilled water and carbonate with 2–3 presses for a high, lasting fizz.

  2. Build

Fill a tall glass with ice. Add the tonic syrup, then top with the freshly carbonated water, leaving 2 cm at the rim.

  3. Float the espresso

Pour the cooled espresso slowly over the back of a spoon so it layers dark over light.

  4. Finish

Express an orange peel over the glass, drop it in, and stir once just before the first sip.

Bottom-up advantage

A top-down carbonator foams over the instant you add CO₂ to anything but cold water. NOVO injects from the base, so the bubbles saturate the whole drink evenly — espresso tonic included.

Tip

Use cold espresso so it layers cleanly without melting the fizz. Want a true tonic bite? Carbonate tonic water directly in the NOVO bottle — bottom-up injection means even quinine-rich tonic won't erupt.
