Espresso Tonic
Bitter-sweet, bright, impossibly fizzy.
Ingredients
- 90 mlEspresso, freshly pulled & cooled
- 600 mlFiltered water, well chilledThis is what you carbonate
- 60 mlTonic syrupOr carbonate tonic water directly — see tip
- to fillIce cubes
- 1Orange peel
Method
Carbonate
Fill the NOVO bottle to the line with chilled water and carbonate with 2–3 presses for a high, lasting fizz.
Build
Fill a tall glass with ice. Add the tonic syrup, then top with the freshly carbonated water, leaving 2 cm at the rim.
Float the espresso
Pour the cooled espresso slowly over the back of a spoon so it layers dark over light.
Finish
Express an orange peel over the glass, drop it in, and stir once just before the first sip.
